Cold Busting Soup Recipe

In our house, if one person gets sick, it’s going to be a long few days as the cold cycles through our family of 6.

Matt got sick last week and slowly everyone else started to get sick too. Luckily, it only lasted 1-2 days and the symptoms were pretty mild.

There were mild fevers, body aches and chills, and mild headaches. After most of those symptoms disappeared, an overall fatigue lingered maybe 1-2 days longer.

Whenever anyone in the house gets sick, I make a big pot of soup. I fill it with cold busting ingredients so that it helps boost our immune system. It also makes it easier for me to take care of the sick kids or hubby because I don’t have to worry about cooking for a couple of days.

The fresh homemade soup I make has 4 key ingredients that make it really effective in helping us feel better quickly.

This soup recipe combined with a lot of fresh juice, water, and rest keeps the duration of any colds pretty low for us.

Matthew did take a covid test and he tested negative. It was just a regular cold. It’s kind of funny. I think we’re so focused on Covid, we forget that regular colds or flu are still a thing.

This recipe is enough for the 6 of us to have 3-4 servings so adjust if you need to.

Ingredients

  • 32 oz. vegetable broth
  • 32 oz water
  • 1 bunch of kale
  • 3-4 carrots
  • 1 red pepper
  • 1 onion
  • 1 minced garlic clove
  • 1 inch of thinly sliced fresh ginger
  • 1 inch of thinly sliced fresh turmeric
  • 1 bunch of parsley
  • 1 bunch of cilantro
  • (optional) veggie sausage (I like the field roast brand for this recipe)
  • (optional) sautéd mushrooms
  • seasonings I use are cumin, garlic powder, chili powder, Italian seasoning, paprika.

The ingredients are very flexible. Ultimately, you want to make a soup that taste good and that you and your family actually want to eat.

The ingredients that are a must are if you’re trying to regain health are garlic, ginger, turmeric, onion and a green. Other than that, make it your own. Taste as you go and adjust. If you don’t like carrots, eliminate them. If you really love celery in your soup, add it. You get my point.

The mushrooms and vegan sausage are definitely added for taste and texture. One thing I would not add is any type of pasta. Noodles or any type of pasta can stick to the colon walls and prevent things from flowing the way they need to when you’re ill. So although chicken noodle soup a is popular remedy for colds, I would keep the soup noodle free for the best results.

I bring everything to a boil for 5 minutes then simmer on low to medium heat for at least an hour.

It’s so yummy and helps us heal so much faster.
